Easy Appetizer from Pampered Chef

Over the years, I've been to a number of Pampered Chef parties and have always been pleased with their products. So when the Chicagonista.com staff was invited to a private tour of their International Headquarters in Addison (I had NO idea they were based in Chicagoland) I was happy to make the trip! It's a beautiful facility, complete with several test kitchens. It was rainy and cold outside, but the Chicagonistas were warm and cozy while we watched demonstrations and sampled cocktails, cookies, and more. I have much more to share from my visit, but for today I'll pass along this delicious (and easy!) appetizer:
Honey-Apple Brie Bites (from The Pampered Chef® Easy & Impressive Appetizers Recipe Collection)
You'll need...
1 Lemon
1 c toasted walnuts
2 medium red baking apples, such as Jonathan (yield: 2 cups finely diced)
1/4 c honey
1 4" round (8 oz) Brie or Camembert cheese with rind
2 pkg (30 total) prepared mini phyllo shells
1) Preheat oven to 400. Zest lemon to measure 1 tsp zest. Coarsely chop walnuts (PC's Food Chopper is great for this!). Finely dice apple. Combine zest, walnuts, apple, and honey into a bowl. Mix gently.
2) Cut cheese into 1/2 cubes (can be done the night before, if you're pressed for time). Arrange phyllo cups on a sheet pan, and place on cheese cube into each cup. Using a spoon or small scoop, top cheese with apple mixture. Bake 6-8 minutes or until cheese is melted.
