I have a confession to make.
Today's drink is not strictly for the holidays. You can serve it at Christmas cocktails, a spring bridal shower, a chic summer gathering, or as an aperitif in autumn. Anytime you want something bubbly and a bit special, Earl Grey Fizz fits the bill. In fact, I'm hard-pressed to think of a gathering where it's not appropriate.
Earl Grey Fizz
Shake 1 oz vodka and 1 oz Earl Grey Tea syrup* on ice. Strain into a chilled champagne flute. Top with a dry (not sweet!) sparkling wine and garnish with a lemon twist.
*Make 1 cup of Earl Grey tea (use 2 teabags). Add 2 cups of sugar to make syrup, and let cool.
For a non-alcoholic version:
Omit vodka and substitute sparkling wine for sparkling cider or a non-alcoholic sparkling brut.
