My new favorite Christmas cookie

Jen @ SecondCitySoiree Back in October, I mentioned a visit to Pampered Chef's Headquarters with the Chicagonista crew. In addition to coming away with some of the items included in my Holiday Tabletops feature, I also got this outstanding cookie recipe. It takes SO little time and effort and people rave about it! Seriously, I've made it twice now (once during a party where I had 12 people at my house...it's THAT easy) and everyone was crazy about them both times.

PEPPERMINT FUDGE COOKIE SANDWICHES
3/4 c semi-sweet chocolate morsels
1/4 c butter
1/2 c sugar
1 egg
3/4 c flour
2 crushed candy canes
1/4 c white chocolate morsels
10-12 mini peppermint patties
1) Preheat to 375. Line cookie sheet w/ parchment. Microwave SS morsels & butter on high 60 seconds,
stirring after each 20 second interval. Add sugar & egg to bowl. Mix until well blended. Add flour and mix until just incorporated. Using a small scoop, drop 20 level scoops of batter onto pan. Bake 10 min or until edges are set.
2) Meanwhile, get white choco ready for melting in microwave (but don't do it yet), and have crushed candy canes & peppermint patties ready
3) Remove pan from oven. Immediately turn half of the cookies over and top with peppermint patty and remaining cookies to form ten sandwiches.
4) While the hot cookies and patties are getting to know each other, melt white chocolate for 30 secs, or until smooth. You will need this chocolate for drizzling. I inverted a plastic baggie over my hand, scooped the melted white chocolate into the inverted baggie, reinverted it, then snipped a little corner off the baggie to use as a piping bag. Pipe white chocolate over cookie sandwiches and immediately sprinkle with crushed candy canes. Transfer to serving platter.
They're good when cooled down, but heavenly while still warm!

Are these the cookies you made at the 2nd Wednesday holiday party? If so, these were ridiculously yummy! I had a warm one and a cooled one. DELICIOUS!
