We live in a time and place where you can get pretty much anything you want, when you want it. Often that's a good thing, but there are times I feel we're a bit spoiled. Enter blood oranges. You can't get them at any other time of year except now (and if you've seen them outside of late fall/winter, please don't tell me). Use this seasonal fruit to its full advantage and fill your glass with beautiful Christmas colors!
Ruby Mimosa
Muddle four blood orange segments* w/ 1 tsp sugar.
Transfer to champagne flute. Fill with rosé cava.
Garnish with mint leaf.
*Here's a video showing how to segment an orange so that all the membrane is removed. He starts cutting into the membrane around 2:20
