Pre-parade St Patrick's Day Brunch

In Chicago, it's the norm to go out for St Patrick's Day. How can a hostess possibly compete with all the pub crawls and parades? Well, don't. Hold your party before the revelry begins by hosting a St Patrick's Day Brunch complete with a stick-to-your-ribs menu that will stand up even in the face of multiple pitchers of green beer. Irish Eggs Benedict - Like a traditional eggs benedict but with an Irish twist! Split and toast English muffins, and top with 1-2 slices corned beef (or corned beef hash), a poached egg, and large handful of shredded Dubliner cheese. If the cheese doesn't melt, put the eggs benedict in a warm oven for just a few minutes.
