As a hostess with many vegetarian friends, I'm always on the lookout for delicious homemade meatless dishes. Whether you're hosting a gathering and need to impress your vegetarian guests, or simply want to take a break from meat (refreshing, isn't it?), here are several tasty suggestions.
Start with the avocado chimichurri bruschetta at left. Chimichurri, a green sauce from Argentina, gives bruchetta a fun summer twist. You can also try white bean dip with pita chips, which is so easy to make. Chop up and serve some of your favorite veggies with it too!
Orzo with roasted vegetables (at right) is so flavorful and satisfying as a main dish, that meat lovers won't miss anything! Perfect for that late summer party, but I'll bet you'll crave it again and again.
Finish with some strawberries and balsamic syrup or a lemon sorbet.
