Too hot? Cool off with these cold soups!


These fruit and vegetable based chilled soups are a wonderful refresher in summer.  Like most of the country, the Second City has lately had a string of hot, muggy days.  Don't discount soup as a starter when the thermometer climbs...just let it chill!

1) Easy Pea and Mint Soup
2) Strawberry Soup (also try Spiced Strawberry Soup)
3) Chilled Pinot Noir and Cherry Soup
4) Creamy Chilled Cucumber Dill Soup (also try "Chilled Cucumber Soup 8" on this list...it's a Joy of Cooking recipe I've made every summer since I was in college)
5) Chilled Cream of Beet Soup
6) Watermelon Gazpacho
