Marion Street Market Bee-mosa
1 tsp honeycomb
5 oz dry sparkling wine
Add the honeycomb to a champagne flute. Top with chilled sparkline wine.
Honey straight from the honeycomb is so delicious, and it blends beatifully with dry sparkling wine. What an elegant yet fun cocktail for a brunch, luncheon, or shower!

Now, I did notice a problem when I made it as above...bits of wax floated to the top, which then got stuck in my teeth. Not cute! So, I propose a variation: instead of putting the honeycomb into a flute right away, drop it into any container, and add the sparkling wine. The wax will then float to the top. Let it stand for a few minutes and then strain it into a champagne flute, catching all the bits of honeycomb. Enjoy!
