
On Friday I participated in "Food Fight! Mom Bloggers vs Food Bloggers" at the Kenmore Live Studios. I'm very proud to announce that my team (the foodies) won!
The challenge was to create a healthy meal that kids will want to eat, and these tacos fit the bill perfectly. Most kids don't like the taste and texture of cauliflower...well, you can't tell that these tacos are made from cauliflower! It's a great way to incorporate a vegetable into a delicious main dish. Give it a whirl whether you have picky kids or just want a fun meatless meal...you could also serve them in mini shells as little appetizers.
"Stoplight" Cauliflower Tacos
(The name comes from the red, yellow, and green toppings)
8 large cauliflower florets
4 taco shells
Taco Seasoning:
1 TBS chili powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp cayenne
Kosher salt
Olive oil
Chihuahua cheese, thinly sliced
Romaine lettuce, chopped
Yellow and red tomatoes, chopped
Preheat oven to 350F
Finely chop florets in a food processor. Spread on a foil-lined pan and toss with olive oil, salt, and taco seasoning. Bake for 10 minutes.
Remove pan from oven and add cheese. Put back in oven about 3 minutes, or until cheese has melted. Remove pan from oven again, and mix cheese and cauliflower thoroughly.
Build tacos with cauliflower-cheese, yellow and red tomatoes, and lettuce. Serve immediately with black beans and rice.
Two notes for those who attended the show: 1) Use a light hand in seasoning these. My student chef assistant was a tad enthusiastic! :) 2) I recommend hard shell tacos instead of soft tortillas.
